Banana Cake Recipe

When my bananas ripen too much I either bake banana bread or banana cake. Somehow I misplaced my really great banana bread recipe and the one I tried that I found on the Internet didn't turn out too good. If you have a good one please send it to me.

This is my banana cake recipe.

Preparation and cooking times:
Pre-heat oven to 350 degrees. Grease and flour baking pan(s)
Choose either one 9 x 13 rectangular pan (bakes for 45 - 50 minutes) or
two 9 inch round pans or three 8 inch round pans (bake for 35-40 minutes).

Ingredients:
1/3 cups of all-purpose flour
1 2/3 cups of sugar
4 medium mashed bananas
2/3 cup butter
2/3 cup milk
3 eggs
1 1/4 teaspoon baking powder
1 1/4 teaspoon baking soda
1 teaspoon salt
(optional)Add approximately 1 cup of finely chopped nuts.


Beat all ingredients on low speed for 30 seconds or until well combined.
Beat on high speed for 3 minutes.
Pour into pan(s).
Bake until wooden pick inserted in center comes out clean.


Cool for 30 minutes before icing with cream cheese icing.

Use a ready made cream cheese frosting or

Cream Cheese Frosting
1 8 ounce package of softened cream cheese
1 tablespoon of milk
1 teaspoon vanilla
4 cups of powdered sugar

Using a medium to large mixing bowl, beat cream cheese, milk, and vanilla on low speed until smooth. Gradually add in powdered sugar 1 cup at a time beating until smooth with each additional cup.
Dress it up a little by sprinkling it with mini chocolate chips or chopped nuts.

WOW, this looks delicious! May have to copy this recipe to make as a "take out" recipe. I've found out I'm sensitive to bananas now, so I can't have bananas any longer - man, I miss them.
