I'm sure there is more than one way to to this. When I tried inking only one part of a stamp, sometimes, I'd accidentally get ink on the part of the stamp that I didn't want to ink.
Here is what I do to fix that. ( Yes, I'm still walking around with Dinosaurs and stamping with wood mounted stamps. ... and I like it here
Step One. Clean the stamp thouroughly.
Step Two. Use tape( I use clear gift wrapping tape) to cover the part you don't want inked.
Step Three. Ink your stamp. The tape might get inky, but the stamp won't.
Step four. Remove the tape and stamp.

Great tip - I usually just grab a scrap of paper from my workspace and slap on a bit of 2 way glue, but the tape sounds much tidier :)
